Recipe for Peppers Stuffed With Minced Chicken and Rice.

Ingredients.

  • 3 red, green and yellow peppers
  • 250 g minced chicken or turkey
  • 1 onion
  • 1 tomato
  • 150g rice
  • 50 g red beans
  • 2 garlic
  • Iodized salt, pepper
  • EVOO oil

How is It Done?

Wash the peppers, cut off the top part with the stem, remove the seeds and set aside. Chop the onion, tomato and garlic and fry in a frying pan with a splash of EVOO oil and a pinch of salt.

Cook the rice al dente and set aside. Cook the red beans separately.

When the vegetables are poached, add the minced chicken or turkey and season with salt and pepper. Mix everything and leave it over low heat, stirring. When the meat is practically done, add the rice and red beans and sauté for a few more minutes. 

We fill the peppers with the mixture and cover them with the stem, and cover them individually in aluminum foil before leaving them in the oven already preheated to 150º for 20-30 minutes.

Once the time has passed, we remove the aluminum foil and serve hot.

It can be stored in the refrigerator so that it is already prepared and heated in the microwave before eating.
