Inspired by the traditional Argentine sweet or glazed carrots, this recipe is our version of the one presented by the Milk Street portal, which cooks the season lightly to enhance the flavor, doing the same with the vegetable itself that is sautéed very lightly and thus obtain that more tender bite, giving it an appearance similar to the pasta.
The ideal is to use long, straight and thick carrots, to be able to remove the greatest number of strips or ribbons with a Y peeler; You can also use a mandolin if you are skilled. Save the harder trunks or inner cores to make a stew, stew, vegetable cream, or broth.
